Method:

| 1. |
Combine
cucumber, ginger, oil, vinegar, salt and sugar together,
mix well, then add Florida Orange and
Florida Grapefruit sections, hold refrigerated. |

Slice
orange from top to bottom, about 3/4 of the way through;
cut into 8 sections. |

Pull
sections of orange to loosen but do not break apart. |

Dip
orange into cornstarch then tempura batter; deep-fry
in 350°F oil for 5-7 minutes; drain, hold warm. |

Sauté
grouper pieces in oil, remove from pan. Drain oil and
add BBQ sauce and Florida Orange Juice
concentrate. |

Cook
orange BBQ for 5 minutes, add grouper back to pan and
coat. |
| 7. |
Place
1 tempura orange on each plate and place grouper in
center of orange. |
| 8. |
Place
6 oz. of salad around orange on plate. |
