BBQ Grouper
with Citrus & Cucumber Salad

Tempura batter -- 3 cups
Cornstarch -- 2 cups
 

BBQ Grouper

Oil, vegetable -- 1/4 cup
Grouper, (4 oz. pieces) -- 4 each
BBQ sauce -- 1 cup
Florida Orange Juice concentrate -- 1 cup
 

Citrus & Cucumber Salad

Cucumber, seedless, (diced) -- 2 cups
Pickled ginger, red -- 2 Tbsp.
Oil 3 oz. --
Vinegar, white 2 oz. --
Sugar -- 1/2 Tbsp.
Salt -- 1/2 Tbsp.
Florida Orange (sections) -- 10 each
Florida Grapefruit (sections) -- 10 each
 

Method:

1. Combine cucumber, ginger, oil, vinegar, salt and sugar together, mix well, then add Florida Orange and Florida Grapefruit sections, hold refrigerated.
2. Slice orange from top to bottom, about 3/4 of the way through; cut into 8 sections.
3. Pull sections of orange to loosen but do not break apart.
4. Dip orange into cornstarch then tempura batter; deep-fry in 350°F oil for 5-7 minutes; drain, hold warm.
5. Sauté grouper pieces in oil, remove from pan. Drain oil and add BBQ sauce and Florida Orange Juice concentrate.
6. Cook orange BBQ for 5 minutes, add grouper back to pan and coat.
7. Place 1 tempura orange on each plate and place grouper in center of orange.
8. Place 6 oz. of salad around orange on plate.
